Coffee and Diabetes

Many studies have found associations between coffee consumption and decreased risk of type 2 diabetes, but it’s not been fully clear why. Several mechanisms have been proposed, including one from Chinese researchers.

Writing in the Journal of Agricultural and Food Chemistry in 2013, they said that compounds in coffee may inhibit the formation of abnormal proteins in the pancreas that have been linked to the development of diabetes. This is done primarily by substances other than caffeine, which explains why most studies have found that decaffeinated coffee is also protective.
