Cold Poached Chicken with Pepper-Caper Sauce

Poaching chicken is a quick and healthy to cook chicken for use in other dishes, such as salads or sandwiches. Or you can serve the poached chicken as a main course, with a sauce. Here the chicken is served with a puréed roasted pepper and caper sauce, but you could also serve it with cocktail sauce, Dill-Caper Dressing, or your favorite salsa.

Timing alert: The chicken can be served at room temperature, but is good as a cold dish, making this recipe a good candidate for make-ahead. The poached chicken and the sauce can both be made a day or so before serving.

Ingredients

  • ⅔ cup chicken broth, homemade or canned
  • ⅓ cup dry white wine
  • ¾ teaspoon tarragon
  • 2 cloves garlic, minced
  • 4 skinless, boneless chicken breast halves (5 ounces each)
  • 1 cup roasted red peppers, homemade or store-bought
  • 2 tablespoons slivered almonds, toasted
  • 1 tablespoon tomato paste
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon olive oil
  • ½ teaspoon hot pepper sauce
  • ¼ teaspoon salt
  • 1 tablespoon capers, chopped if large

Directions

  1. In a large skillet, combine the broth, wine, tarragon, and garlic. Bring to a boil over medium heat. Reduce to a simmer, add the chicken, cover, and cook, turning over halfway, until the chicken is cooked through, about 10 minutes. Transfer the chicken to a plate, cover, and refrigerate. Measure out 2 tablespoons of the poaching liquid to use in the sauce (save the remainder for another use).
  2. In a food processor or blender, combine the reserved 2 tablespoons chicken poaching liquid, the roasted peppers, almonds, tomato paste, vinegar, oil, hot pepper sauce, and salt, and process to a smooth puree. Stir in the capers.
  3. To serve, slice the chicken across the grain on the diagonal and top with the pepper-caper sauce.
Makes 4 servings.
