Dill-Caper Dressing

Silken tofu makes a wonderful salad dressing. The rich creaminess of the tofu is accented in this dressing by spicy Dijon mustard, chopped capers, and fresh dill. In addition to using this as a salad dressing, it would make a tasty sauce for fish or chicken.

Makes 1½ cups.

Ingredients

  • 1 cup (8 ounces) firm low-fat silken tofu
  • ¼ cup cider vinegar
  • 2 tablespoons Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup capers, drained and minced
  • ¼ cup chopped fresh dill

Directions

In a food processor or blender, combine the tofu, vinegar, mustard, salt, and pepper, and purée until smooth. Stir in the capers and dill. Store the dressing in the refrigerator.
