Fresh Blueberry Jam

Fresh Blueberry Jam

A small amount of cardamom and ginger gives this jam a slightly spicy note.

Makes 1½ cups


3 cups blueberries

1 cup sugar

4 strips (2 x ¼-inch) lime zest

2 tablespoons fresh lime juice

¾ teaspoon cinnamon

½ teaspoon ground ginger

¼ teaspoon cardamom

⅛ teaspoon salt

⅛ teaspoon pepper


1. In a medium saucepan, combine the blueberries, sugar, lime zest, lime juice, cinnamon, ginger, cardamom, salt and pepper. Cook over medium heat, stirring frequently, until thick, about 20 minutes.

2. Remove from the heat. Discard the zest. Let cool to room temperature. Store the jam in the refrigerator.
